Ful Medames (Egyptian Stewed Fava Beans)
A simple and classic Egyptian recipe that you can try. "Ful Medames" (فول مدمس) is a popular traditional breakfast dish made with fava beans. It's easy, healthy, and hearty!
Here's a street-style version of Ful Medames like you'd find in Cairo:
Ingredients
- 1 can fava beans (about 15 oz / 400g)
- 2-3 tbsp vegetable oil or light olive oil (used generously!)
- 1 tsp ground cumin
- Salt to taste
- Juice of half a lemon
- Optional:
- Pinch of chili flakes or a drizzle of chili oil
- Dash of white vinegar
- Sliced pickles, tomatoes, onions
Instructions
- Warm the beans: Empty the fava beans (with a little liquid) into a small pot and heat on medium.
- Season: Add salt and cumin. Stir well and let it simmer for 5-7 minutes until soft and warm.
- Mash lightly: Use a spoon or fork to mash the beans just a bit — you want a chunky, thick texture.
- Add oil & lemon: Turn off the heat and stir in lemon juice and a generous splash of oil (it should look glossy).
- Street-style serving:
- Slice open baladi bread or pita.
- Spread the ful inside like a sandwich.
- Top with: pickles, tomatoes, onions, or a drizzle of chili oil or vinegar.
- Wrap it up — or serve in a bowl with bread on the side.
This is often eaten on the go, wrapped in newspaper or foil, with strong tea or a yogurt drink. Super filling, super cheap, and very Egyptian.
